Melon & Avocado Toast

Ingredients

  • 2 slices of oroweat White bread, toasted
  • ¼ cantaloupe, diced
  • ¼ honeydew, diced
  • 1 avocado
  • 2 tablespoons Feta cheese
  • 5 sprigs of mint

Instructions

  1. Chop cantaloupe and honeydew into small, bite-size pieces. Set aside.
  2. In a small mixing bowl, mash ½ an avocado.
  3. Toast 1 slice of bread until golden brown (about 4 minutes).
  4. Spread avocado mash on bread slice and top with honeydew and cantaloupe pieces.
  5. Sprinkle Feta cheese crumbles over fruit.
  6. Top with chopped mint and serve.
