Ingredients

  • 2 slices of oroweat Organic 22 Grains & Seeds bread, lightly toasted
  • 1 small sweet potato
  • ¼ zucchini
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 tablespoons spicy red pepper hummus
  • ½ avocado, sliced
  • 4 grape tomatoes, sliced
  • 1 tablespoon microgreens
  • Special Tools:
  • Spiralizer

Instructions

  1. Use spiralizer to cut sweet potato and zucchini into ribbons.
  2. Transfer to a medium bowl and toss with olive oil, salt and pepper.
  3. Transfer mixture to a small skillet and sauté over medium heat until tender.
  4. Spread each toast slice with 2 tablespoons of hummus.
  5. Layer on sautéed vegetables, avocado slices and tomatoes and garnish with microgreens.
